00:19
The Secret History of Pizza!
00:22
Like a good slice, the origin of pizza itself
00:24
is thick with the cheese of mystery.
00:27
Rich, with the sauce of debate.
00:29
There were many pizza precursors
00:31
throughout the Mediterranean.
00:32
The ancient Greeks enjoyed various flatbreads
00:34
going back thousands of years.
00:36
Focaccia, is one of the most direct ancestors of pizza.
00:39
A tasty flatbread the Romans called Panis Focacius.
00:43
The word Pizza, meaning pie would only
00:46
start to appear around 1000 AD, but the dish would
00:49
still be missing most of the things you might expect.
00:52
Like, you know, sauce, pepperoni, cheese,
00:56
basically the whole pizza.
00:57
Centuries later, pizza, still just
00:59
flatbread with oil and toppings.
01:01
Is largely considered a food for the poor,
01:04
until, this guy comes in.
01:06
Raffaele Esposito.
01:08
This pizza maker was charged with making a
01:10
special pizza for Queen Margherita.
01:12
And yes, attentive listeners, that name
01:15
might ring a few bells, because,
01:17
in an effort to make a pizza worthy of his royal guests,
01:20
Esposito crafted something experimental and patriotic.
01:24
A pizza emblazoned with the colors of the Italian flag.
01:28
He did that by flavoring it with
01:29
basil, mozzarella, and tomato.
01:32
Thus, creating what we would later call
01:34
The Margherita Pizza.
01:36
And because of this moment, Esposito is created by many
01:39
as being the father of all modern pizza.
01:42
Later that century, Italians started
01:44
immigrating the the United States.
01:46
And, they brought pizza with them,
01:48
as a little slice of home.
01:49
It wasn't long at all before American Pizza
01:52
developed its own distinct flavor.
01:55
So, whether you like yours deep dish,
01:57
wood fired, stuffed crust, or with
01:59
artisanally crafted heirloom tomato sauce.
02:02
No matter which way you slice it,
02:05
this pie, is here to stay.
02:08
Just, keep the anchovies off my half huh.
