Hi, I'm Tanya Steel, editor-in-chief of Epicurious.com.
And you're watching In the Kitchen With Epicurious.
Today we're here with Samantha Bee, who has written
one of the best, funniest books.
This is just, regales us with the stories of your youth.
Thank you, yes. Some of them
a little ribbled, I will have to say.
(Samantha laughs) I have to agree with you.
Now, you are a power woman. I'm a human power waffle.
Exactly! (Tanya laughs)
You love to cook and I know you have three kids.
Yes, I do. Every kid loves waffles.
Right, yes, my son calls them waffs.
Waffs, who doesn't love waffs?
Exactly. I love waffles.
The great thing about these waffles is that
they're very high protein, and low fat, and low calories.
And the great thing about this recipe is it's so simple
because you can make most of it ahead.
So, what we've done here, actually, is last night
we did yeast and milk and crystallized ginger,
now, that's the secret to this, this has actually got
crystallized ginger and it gives it something,
a little bit of a spice to it.
I love the ginger. Love the ginger.
Ginger head, ginger flavor. Ginger, ginger.
So you're gonna let this sit and foam for 10 minutes
and then you're gonna add buckwheat flour, or whole wheat,
depending on what you have. Okay.
All purpose flour and some oats,
as well as cinnamon and salt.
And then you just let it sit overnight and this is what we
get, this gorgeous little-- This nice little mass
of deliciousness. Exactly.
Future deliciousness. Future deliciousness.
So to make it rise, to make these actually Belgian waffles
we're gonna add some egg whites that have baking powder.
So, into this mixture we're gonna add some melted butter.
Oooh. Oooh, buttery.
And then we're gonna do the folding, now,
do you wanna do the folding? I would love to fold.
Okay. I would love
to demonstrate my folding prowess.
When you fold you're actually doing half.
Half at a time? Exactly.
Watch me go! Mmm!
Nice. See this?
It's a dense batter. It is.
This is why we're adding the egg whites.
This is where the power comes in.
This is the power? I'm feeling the power.
Beautiful, now we're gonna add the other.
Get in there. Ok, now we're gonna really...
You're gonna really get into that.
In Canada, we like to say, now I'm gonna give 'er.
I don't know why we say that, now I'm gonna
get in there and give 'er!
Alright. (Tanya laughs)
Wow, so this is your giving her.
(laughing) I'm not really giving her
all that well, okay, here we go.
Oh, this is nice.
Feel that, that's really nice. That looks velvety.
Okay, that looks pretty good. Thank you, I did that
all myself. (Tanya laughs)
Amazing! So we've just got
a standard Belgian waffle maker and we've sprayed
a little bit of spray on there
just so that it doesn't stick.
And we're gonna use about a cup of the batter.
So in order to do that you just do it until it's filled
to the top and let it spread. That looks really good.
I just bought myself a waffle maker.
You did? I did, 'cause my children
love waffles. It really is one of those
appliances that actually is worth getting.
Yes, I got a rice cooker recently, too,
I'm all about the tools. The tools.
I'm getting all loaded up with tools
Alright, I heard this beeping.
(in unison) Oh! (laughing)
Just like Christmas morning! Yay!
Oh, looks so good! Okay.
I'm gonna cut this puppy up and here we go.
That is really nice, those are perfect!
They are perfect! Way to go!
And let's make them even more perfect by topping them.
Okay, may I? Please.
First I'm gonna drizzle some yogurt, I love the yogurt.
Love, this is just plain yogurt so it adds moisture
and calcium and a little bit of tartness, which is nice.
And some almonds. For crunch.
Okay, and a little sliced banana, nice touch.
Who wouldn't want some sliced--
Get some fruit in there. Yup.
Who doesn't love a banana?
And then some honey. I like this.
I don't normally go for the honey.
Really? But, okay, I'm gonna see,
I'm gonna see. You are.
Normally, I'm a maple syrup girl.
As you should be, coming from Canada, but you tell me
what you think. Okay.
The other day, I did buy some honey from a New York rooftop,
rooftop honey. Oh my gosh,
how cool is that?! I'm gonna give it a whirl.
Alright. I'm glad I don't live
below those people. (Samantha laughs)
I don't want bees around my windows.
I'm reasonably glad that I wouldn't wanna live near them,
but I enjoy their work.
Can you taste the power?
I'm gonna lift this whole island.
That is delicious. So good!
I love the honey and the yogurt, and the texture
of the waffle is very light.
Surprisingly light. It is, despite
all that buckwheat.
But we hope you make it at home.
You wanna enjoy the power just like we did.
That was good. Thanks for watching.
