How to Make a Solid White Russian

Mixologist Eben Freeman, of Tailor restaurant in New York City, demonstrates how to make a "solid" White Russian (a.k.a. Kahlúa Rice Krispies).

Gonna show you how I make one of my solids,

which is Kahlua Rice Krispies.

Start with Rice Krispies.

I'm just gonna pour the entire box into this mixing bowl

And then, simple enough.

I'm gonna add some Kahlua.

You can add about a half a cup of Kahlua to the bowl.

And just toss the Rice Krispies in the Kahlua.

You can hear 'em snap, crackle, and pop

and knowing that they're gettin' coated.

We're not looking to drench them and make them soggy.

We're really just putting a light coat of Kahlua on there.

That we're then going to dry and put a second coat on.

But for the first coat, just make sure you turn it

as much as you can so that there aren't any pockets

of Kahlua that make it too sticky or too wet.

Then I just take those Rice Krispies

that have been coated in the Kahlua,

put them onto a tray of a dehydrator.

Just start with a mound in the middle.

Sort of push it around so that it's not stacked

on top of each other, just basically in a single layer.

In about an hour, I'll take those Krispies out

and toss 'em in another coating of Kahlua,

and then leave them in the dehydrator overnight.

That way, they'll still be crunchy

but have that Kahlua flavor on 'em.

There won't be any alcohol in them,

'cause it'll all have evaporated,

but you'll get that coffee Kahlua flavor

in the Rice Krispies.

When I put this together, I just add

a little bit of vodka melt that gives you

the alcohol that's missing in the cocktail.

And actually makes what is known as a liquid cocktail,

the White Russian, into solid form in breakfast cereal.
