Hi, I'm Lauren Salkeld.
00:09
Welcome to Epicurious's guide to summer entertaining.
00:12
Today, we're going to show you
00:13
how to host an elegant brunch.
00:15
I have Gina Provenzano here with me.
00:16
She's an entertaining expert and a good friend.
00:18
Hi.
00:19
Thanks for coming.
00:20
Thank you for having me.
00:21
Now, I think that the secret to any good brunch
00:23
is a mix of sweet and savory dishes.
00:26
We have two very sophisticated baked egg dishes here.
00:30
We've got a salmon and asparagus frittata.
00:33
And then we have a fresh corn quiche.
00:35
We're serving this here in the cast iron
00:37
that we cooked it with.
00:38
I love that just because you can take it
00:40
right from the oven to the table.
00:41
The great thing about both these dishes
00:42
is you can actually bake them the night before
00:45
and then turn the oven on to warm, about 200 degrees.
00:48
Just warm them up before they're ready to serve.
00:50
We also have a salad here that kinda bridges
00:52
the gap between sweet and savory.
00:54
And it has a lovely strawberry vinaigrette.
00:56
And you also always want to have
00:57
lots of little things for people to nibble on.
00:59
Here we've got some cheese and some flatbread.
01:01
We also have dessert.
01:03
This is a beautiful parfait made with ricotta
01:05
and honey and fresh berries.
01:07
And, Gina, you've put them all in these little bowls.
01:09
Why did you do that?
01:10
Portion control, first of all.
01:12
And you can just pick it up and it's really portable.
01:14
This table looks beautiful and I would just love
01:17
for you to tell us a little bit about how you set this up.
01:20
These placements are actually just paper.
01:22
Glass plates are great cuz any pattern
01:24
that you have on your tablecloth will come through.
01:27
What brunch would be complete without a cocktail?
01:30
I love this one.
01:30
It's champagne, blackberries, Chambord, that's it.
01:34
And, Gina, you've decorated the glasses,
01:36
tell us about these.
01:38
Well, they're just drink markers
01:39
so everybody knows which is theirs
01:41
and nobody gets them confused.
01:42
And, by the way, this smells delicious.
01:45
Oh, thank you.
01:46
Well, I say we give it a try.
01:47
That sounds good.
01:48
Here's to a happy summer.
01:49
Cheers
