How to Trim an Artichoke

and this is how to trim an artichoke.

It's best to look for an artichoke

that has a nice long stem

because that's an edible part as well.

This first thing that I'm gonna do

is trim off the stem using my paring knife.

Next I'm gonna remove all of these tough outer leaves.

Continue pulling off all the tough leaves

until you get to the white part.

Use your paring knife to trim the stem.

And you can also clean up around the outside of the base.

The tips of these leaves are still really tough,

so next you want to use a serrated knife to cut them off.

Now that we've removed those tough outer leaves,

we're going to halve it using our serrated knife.

You want to keep a bowl of acidulated water nearby

which is just water with a little bit of lemon juice

and that'll prevent it from browning.

Finally, we're gonna use a small spoon

to scoop out the choke which is this part right here.

And then it can go right into the acidulated water.
