Hey, what's up, guys?
00:13
I'm Joseph J.J. Johnson, the executive chef
00:16
here at The Cecil in Harlem.
00:17
We're gonna make some turkey-fried rice,
00:19
so I bought some cool things at the market.
00:21
I have, of course, celery. It's Thanksgiving.
00:23
Some apples. They're really in season.
00:25
Onions, Mike's Hot Honey,
00:27
some pineapple fermented black bean.
00:29
Ginger, bird's eye chili.
00:31
House made chorizo sausage.
00:33
This is about a 16 pound bird.
00:34
(laughter)
00:36
We're gonna do a simple season here:
00:37
salt, pepper, some thyme inside the turkey.
00:42
My philosophy is all about being simple
00:44
and getting flavors on top of flavors.
00:46
Simple, simple, super simple.
00:49
The fat from the skin is gonna get the turkey golden brown.
00:53
Using white onions for the sweetness.
00:58
Gala apples.
01:02
I like to peel my celery 'cause it has its teeth.
01:08
Ginger. You do waste less with a spoon.
01:12
You want your garlic chopped.
01:14
Some parsley.
01:15
This is like the secret ingredient for the rice.
01:17
Take it out the casing.
01:20
Hot honey right on top of the rice.
01:22
I'm obsessed with fermented black beans.
01:25
This bird is, this is amazing.
01:28
I'm ready to break this down and turn this
01:29
into fried rice.
01:31
Thanksgiving is one of my favorite holidays of the year.
01:33
Family gets together,
01:35
you brag about who cooked the best food.
01:37
My worst year of cooking the turkey was stuffing
01:39
it with crab meat.
01:40
I don't know why I was trying to do that,
01:41
but I thought I was a chef at 16 years old.
01:44
My family had to eat it.
01:45
There was no choice; there was no turkey left.
01:50
Throw some grapeseed oil.
01:51
(sizzling)
01:55
(laughter)
01:57
Some apples, turkey, turkey with the stick.
02:01
Chinese black fermented rice.
02:05
(flames)
02:11
So a big bowl of rice.
02:15
Throw whatever you have left over from Thanksgiving
02:16
and make an amazing beautiful fried rice.
02:19
This is really good.
02:21
I have no words.
